THE BIRTHPLACE
The story of our champagne started over 200 years ago. The vinyard is located at Celles-sur-Ource, in the Aube Valley close to the Burgundy, The field has beautiful parcels of vines, well exposed and enjoying quality related Burgundian soil. A land, which reveals itself over time, as these territories were long disputed by the County of Burgundy and the County of Champagne. Finally, the Comtes de Champagne established its legitimacy and its current reputation.

THE CELLAR
The bottles are stored in the cellar, deep and cool, which operate the second fermentation in the bottle. They are placed on the neck panels slightly inclined downwards for the purpose of lowering the deposit to the neck of the bottle.
We turned 1-3 times a day for several weeks. Then they are ready to be disgorged. The cellar is a special place. The arches, soft lighting and smells combine to give you a unique feeling of peace and quiet, with the spectacle of thousands of future bottles of champagne.

THE VINEYARDS

South of the Champagne vineyards Cellois are spread on the sunny slopes of the Ource valley. The vines benefit from a base of chalky sediments with a clay-limestone surface layer that create essential to the culture of Champagne vineyards conditions. Pinot Noir provides body and ability for ageing. Chardonnay provides the freshness and elegancy. Pinot Blanc gives the flower and fruit aromas All conditions of soil, climate and grapes combine to give the champagnes a unique flavor, bouquet, and personality that cannot be found anywhere else.

BRUT

Our Le Medaillon Brut is a complex blend of 70% Pinot Noir and 30% Chardonnay. Using grapes grown from the finest parcels, this extraordinary Champagne provides the consumer an impressive sensation of balance, purity and freshness.

This delicate Champagne is aged 30 months, in the cellars, where it is permitted the time to develop to a glorious finish. Its color is a delicate golden, with fine and persistent bubbles.

It possesses a rich nose with a beautiful intensity, and fresh cream and white flowers aromas.

COMPOSITION
70% Pinot Noir, 30% Chardonnay. Aged 30 months. Second fermentation in the bottle.

PALATE
The blend of the 2 grapes brings freshness and fruitiness. The mineral notes will contribute to a long length.

Serve itself to enhance your friendly evening. Will be perfect with sea food, chicken and some hard cheeses.

ROSÉ

Our Le Medaillon Rosé is made using the saignée method, and contains 100% Pinot Noir grapes. This method is very rare.

It allows the Champagne to retain all the flavor, structure and aroma from the Pinot Noir grape. Again, following the Le Medaillon tradition, this Rosé is aged 30 months, to create a truly unique product.

In France, virtually all Rosé Champagnes are made by blending, giving the Le Medaillon Rose a unique market position and product.

COMPOSITION
100% Pinot Noir by saignee. Aged 30 months. Second fermentation in the bottle.

EYE
A delicate blush pink color with fine and persistent bubbles.

NOSE
Delicate nose of red fruit and hint of candy.

PALATE
The palate is vivacious, leaving a feeling of fruity sweetness.

PAIRING
Rose is pleasant tasting as an aperitif or with exotic or Asian dishes. This rose will also perfect with a strawberries tart.

CUVÉE RESERVE

Our Le Medaillon Cuvée Reserve is made with 80% Pinot Blanc, (which represents less than 0.5% of the vineyards’ production in the region), 10% Pinot Noir and 10% Pinot Meunier grapes.
Fewer and fewer wine producers are able to access Pinot Blanc grapes, making this Champagne extraordinarily rare and unique.

Furthermore, the Cuvée Reserve product is a wholly tête de cuvée product, representing the most meticulously selected, expensive and highest quality Champagne in a Champagne house’s offerings.Fewer and fewer houses are able to offer a 100% tête de cuvée.

The Company is able to combine high quality with controlled production quantities, laying the groundwork for the success of this extraordinary product.

COMPOSITION
80% Pinot Blanc, 10% Pinot Noir, 10% Pinot Meunier, 100% “tete de cuvee” Temperature regulated fermentation in the bottle.

A bright light gold color.

NOSE
Delicate nose of white fruits and white flowers.

PALATE
The palate is vivacious, leaving a feeling of fruity sweetness with a silky finish

PAIRING
The Cuvee Reserve will be perfect with lobster and sea bass.
